Viennese Whirls

Hi guys! A delicious recipe for your today! Viennese Whirls. A melt in the mouth delicate shortbread biscuit sandwiched between silky vanilla buttercream and sweet jam. Biscuit HEAVEN!

Any jam can be used in this recipe just use your favourite one! You can add any flavourings/fillings and play around with the flavours. Some delicious ideas would be lemon curd, salted caramel, biscoff anything at all ! You could add the sauce to the buttercream than add extra like I did with them jam. So many possibilities!!

Equipment

  • Electric whisk
  • Bowls
  • Piping bags
  • Piping nozzle

Ingredients

Biscuit

  • 225 grams Butter Soft
  • 50 grams Icing sugar
  • 1 tsp Vanilla Extract
  • 220 grams Plain flour
  • 40 grams Cornflour

Filling

  • 80 grams Butter Soft
  • 160 grams Icing sugar
  • 1 tsp Vanilla Extract
  • 10 tsp Raspberry jam

Instructions

  • Preheat oven to 190C Gas/ 170C Fan. Line two trays with parchment.
  • Using an electric whisk mix your butter and sugar until pale and fluffy.
  • Mix in your vanilla until combined.
  • Sieve in your flour and cornflour then fold through until completely combined.
  • Add mix into a piping bag with a nozzle and pipe 20 round swirls onto your baking tray.
  • Bake for 13-15 minutes until lightly golden. Set aside to cool.
  • Now for the buttercream! Cream your butter in a bowl till light and pale.
  • Mix in your vanilla and icing sugar until smooth.
  • Place into a piping bag and pipe the buttercream onto the flat side of 10 of your cooled biscuits.
  • Place a teaspoon of jam on the flat side of the other 10 biscuits. Sandwich your biscuits together.
  • Dust the top of your biscuits with icing sugar if you wish. Enjoy!!

Notes

  • These will stay fresh for about 2-3 days in a sealed container.
  • Any jam/fillings can be used.
  • If you haven’t got a piping bag you could just roll the mix in your hands with gloves and bake like that.
  • I used a star nozzle but any can be used.
  • Enjoy!
