Soft Baked Oat Bars

Hey guys! A delicious Healthier recipe for you today! Soft Baked Oat Bars, the perfect snack for any time of the day. Sweet nutty and perfectly soft packed with Chocolate chips.

These bars are best eaten on day 1 & 2 but you could wrap them well and freeze them to take out when you like. Perfect to make at the start of the week. Honey, maple syrup or golden syrup can be used in this recipe. You can use any of your favourite nut butters. Use your preferred Chocolate chip or none at all.

I brushed the top of mine with honey when it came out of the oven for a tasty shiny top. This a completely optional step though. These bars would work very well with gluten free flour and oats. Also to mention, If you’re not a fan of cinnamon you can leave it out. If you cut these bars into 16 pieces they will be 170 per portion.

Equipment

  • 8×8 Tin
  • Baking paper
  • Bowls
  • Whisk
  • Weighing scales

Ingredients

  • 75 grams Honey Or maple syrup
  • 75 grams Light Brown Sugar
  • 75 grams Peanut Butter
  • 2 Eggs
  • 40 grams Coconut oil Melted
  • 140 grams Oats
  • 60 grams Plain Flour
  • 100 grams Chocolate chips
  • ½ tsp Cinnamon
  • 1 tsp Vanilla Extract
  • ½ tsp Baking powder

Instructions

  • Preheat your oven to 200C/180 C Fan. Grease and line your 8×8 square tray.
  • In a large bowl mix together your eggs, sugar, coconut oil, honey, peanut butter and vanilla.
  • Add in your oats, flour, cinnamon and baking powder and mix until well combined.
  • Fold through your chocolate chips then place your mix into your lined tin. Smooth till even.
  • Bake for approximately 20 minutes until slightly golden on top.
  • Remove from the oven and brush with extra honey for a shiny top if you wish. This step is optional.
  • Leave to cool completely then cut into bars. You can get up to 16 decent sized bars out of this bake. Do more or less if you like.
  • Enjoy!
