Pulled Chicken Birria Style Tacos

Hey guys! A DELICIOUS recipe for you today! Pulled Chicken Birria Style Tacos! A simple slow cooker dinner you will want to make again and again. Full of flavour and gooey cheese!

This recipe is super versatile! You can play around with different fillings and veggies if you wish. You could try this with some beef or pork, they would be incredible. Feel free to add in any of your favourite taco additions to this recipe too. I served mine with some limes and a guacamole.

Pulled Chicken Birria Style Tacos

Slow cooked pulled chicken in a birria style taco. Full of flavour and gooey cheese!

Equipment

  • Slow Cooker
  • Knife
  • Frying pan
  • Bowls
  • Spatula
  • Blender

Ingredients

  • 500 grams Chicken thigh or breast
  • 1 tin Chopped tomatoes
  • 1 White onion Diced
  • 1 Red pepper Diced
  • 3 cloves Garlic Crushed
  • 1 Stock pot or stock cube
  • 1 tbsp Chipotle paste or 1 Chilli
  • 2 tbsp Light brown sugar
  • 1 tbsp Smoked paprika
  • 1 tbsp Chilli powder
  • 1 tbsp Ground corriander
  • 1 tbsp Ground cumin
  • 1 tbsp Dried oregano
  • Salt & Pepper To taste
  • 350 grams Water
  • 8 Corn tortilla shells
  • Your favourite grated cheese Use how much or little you like!

Instructions

  • Place all of your ingredients into your slow cooker (Except for your tortillas and cheese)
  • Place on high for 4 hours or low for 8 hours.
  • Once cooked, remove your chicken from the slow cooker to a bowl and shred with a fork.
  • Using a blender, blend all the juices and vegetables left in your slow cooker to give you a smooth sauce.
  • Place a frying pan on a medium heat with a splash of oil.
  • One or two at a time, dip your tortilla into the sauce then place in your pan. Fry until nice and coloured/crisp on one side then flip over.
  • Top the toasted side with your cheese all over and your shredded chicken on one side. Fold over to form your taco.
  • Fry your taco on both sides until all toasted and delicious.
  • Repeat until you have used all your tacos.
  • Place your tacos on a plate and serve with a small bowl of your left over sauce.
  • Dip your tacos into the sauce and tuck in, enjoy!!
