Any type of chicken can be used in this recipe, I just LOVE a boneless chicken thigh. Feel free to also add in some veg like onions, peppers ect. This recipe serves 2 people but can be doubled to what you need.

Firecracker Chicken Thighs

Equipment
- Chopping board
- Knife
- Frying pan
- Spatula
Ingredients
- 400 grams Boneless Chicken Thighs Approx 6 Thighs
- 100 grams Cornflour
- Salt & Pepper
- 15 grams Salted Butter
- 3 cloves Crushed Garlic
- 1 tsp Grated Ginger
- 60 grams Hot sauce
- 10 grams Rice wine vinegar Or white vinegar
- 15 grams Soy sauce
- 25 grams Ketchup
- 100 grams Light Brown Sugar
- Cooked rice to serve Optional
Instructions
- Place a large frying pan on a medium heat with some frying oil.
- Season your chicken thighs with salt and pepper then dip them in a light coating of cornflour.
- Fry your coated chicken thighs for a few minutes on each side until golden brown and cooked through. Remove from the pan and set aside.
- In the same pan, mix in your butter to de-glaze.
- Add in your garlic and ginger, cook for 1 minute.
- Pour in your hot sauce, ketchup, soy, vinegar and brown sugar. Mix and cook until simmering.
- Add your chicken back into the pan with your sauce to warm up, coat your chicken in the sauce while heating.
- Serve you chicken over rice and top with some extra chillis or spring onion if you wish. Enjoy.
