Cookie Chunk Brownies

Hello everyone! Cookie Chunk Brownies for you today! A gooey, fudge brownie base topped with crisp chocolate chip cookie chunks. The best of both worlds, also known as Brookies.

Do you ever find yourself not being able to decide between a brownies or a cookies? This is the recipe for you! It is super simple and just irresistibly good. Brookies will become one of your favourite things to bake, I promise you.

Feel free to use a mix of chocolate chips in this recipe. I used milk chocolate but dark or white would be lovely! Tip: Warm this traybake up in the microwave and top with ice cream for the ultimate dessert!

If you want to add another dimension of flavour you could brown your butter but this is optional. This step really makes a difference for that added depth of flavour. It gives a deep, nutty, caramelised taste to the butter. Its an optional step but I think it brings the recipe to a whole new level! In short, You are heating up the butter until the milk solids start too toast and brown.

  • 140 grams Salted Butter
  • 100 grams Dark Chocolate
  • 300 grams Caster Sugar
  • 2 Eggs
  • 60 grams Cocoa Powder
  • 100 grams Plain Flour


  • 60 grams Salted butter
  • 40 grams Caster Sugar
  • 40 grams Light Brown Sugar
  • Half an Egg
  • 1 tbsp Cornflour
  • 125 grams Plain Flour
  • 1/4 tsp Baking powder
  • 1/4 tsp Bicarbonate of soda
  • 100 grams Milk chocolate chips For Cookie mix
  • 50 grams Milk chocolate chips For topping


Brownie layer

  • Preheat oven to 200C/180C Fan. Grease and line your 8×8 Square tray.
  • Melt butter and chocolate in the microwave. Leave to cool for a few minutes.
  • Add your egg and sugars to a bowl and whisk until fluffy.
  • Whisk in your chocolate and butter mix until combined.
  • Fold in the sieved flour and cocoa util just combined.
  • Pour the mix into your tin and smooth out till even.

Cookie layer

  • In a large mixing bowl, cream the butter and sugars until light and fluffy.
  • Add in your egg and vanilla and combine till smooth.
  • Sieve in flour, baking powder, cornflour and bicarbonate of soda . Fold until you have a firm dough.
  • Fold in your chocolate chips
  • Top your brownie layer with chunks of your cookie dough, leaving small gaps in-between.
  • Sprinkle with your 50g of chocolate chips.
  • Bake for 35-40 minutes. There will be a slight jiggle in the center of your brownies.
  • Leave to cool completely. I put mine in the fridge for awhile after cooling so I get a nice and sharp cut.
  • Portion up into 9 servings using a hot knife. Cut small if you wish! Enjoy.
