I baked a loaf of Cinnamon Swirl Banana Bread today, and honestly, the smell alone could make your heart melt. Had a few bananas gone a bit too ripe on the counter, so I mashed them up with some melted butter, brown sugar, an egg, and a splash of vanilla. Nothing fancy, just the usual bits, but it all came together nicely, thick and sweet like the perfect comfort bake.
The best part was the cinnamon swirl. A simple mix of sugar and cinnamon that I layered through the batter. It looked lovely going into the oven, with those soft ripples of cinnamon running through the pale banana mix.
When it came out, the whole place smelled unreal, warm banana and spice filling the air. The top had a golden crust, and inside was soft and tender with those gorgeous cinnamon streaks. I had a slice while it was still warm with a cup of tea, and it was pure comfort. Simple, sweet, and just what I needed.

Cinnamon Swirl Banana Bread

Ingredients
- 150 grams Melted Salted butter
- 185 grams Light Brown sugar
- 3 Large Eggs
- 1/2 tsp Vanilla extract
- 3 Ripe bananas
- 330 Self raising flour Sieved
Cinnamon Swirl
- 45 grams Light Brown sugar
- 45 grams Caster Sugar
- 2 tbsp Cinnamon
- 65 grams Butter Melted
Instructions
- Preheat oven to 180C/160C Fan. Line a 2lb loaf tin with parchment.
- Start my mixing all your cinnamon swirl ingredients in a small bowl until combined then set aside.
- In a different small bowl, mash up bananas with a fork.
- In a large mixing bowl, whisk the butter and brown sugar together.
- Whisk in eggs and vanilla extract until fully combined. Next mix in your bananas.
- Fold in your flour,.
- Put 1/4 the mix into your lined loaf. Pour over 1/3 of your cinnamon mix. Repeat until you reach the top. I swirled in the last layer of cinnamon mix.
- Bake for approx 60 minutes until a toothpick comes out clean.
- Enjoy! Delicious cold or warmed up. I topped mine with some icing drizzle which is optional. I mixed icing sugar with a drop of milk to get a drizzle consistency.
