Churro Cookies

Hey everyone! SUPER TASTY cookie recipe for you today! Think Churros but in cookie form. Crispy chunky cookies inspired by your classic Nutella stuffed cinnamon churro. 

Such a big fan of these. Chunky, Crispy and gooey with a delicious kick from the cinnamon. These are so nice warm with some ice cream too!

This recipe can be made with or without the Nutella stuffing. I made half my batch stuffed and half plain. They were both incredible. So its up to you guys on what you want to do. I made my cookies super big and got 6 cookies out of the batch but feel free to make 8 smaller cookies.

Churro Cookies

Ingredients

Filling

  • 6 Tbsp Nutella

Cookie

  • 110 grams Salted Butter Cold & Cubed
  • 100 grams Light brown sugar
  • 60 grams Caster sugar
  • 1 Egg
  • 1 teaspoon Vanilla
  • 225 grams Plain flour
  • 1/4 tsp Cinnamon
  • 1/2 Teaspoon Bicarbonate of soda
  • 1/2 Teaspoon Baking powder
  • 100 grams Chocolate chips/chunks

Coating for cookie

  • 100 grams Demerara sugar
  • 1/2 tsp Cinnamon

Instructions

  • 1 hour before making your cookies, spoon 6 tablespoons of Nutella on some parchment paper and freeze.
  • Place your butter into a mixing bowl with both sugars. Mix until light and creamy.
  • Add in your vanilla and one egg and combine.
  • Mix in your flour, bicarbonate of soda, baking powder and cinnamon until just combined.
  • Fold in your chocolate.
  • Weigh out 6 cookie dough balls approx 105g.
  • Remove Nutella from the freezer and form the dough portions around each of them.
  • In a small bowl, mix your coating for the cookie. Roll each cookie dough ball in your cinnamon sugar making sure its coated well.
  • Place in the freezer on a parchment tray for at least 1 hour.
  • Preheat your oven to 200C/ 180C Fan 30 minutes before baking.
  • Bake for 18-20 minutes. Bake three cookies per baking tray at a time because they are very large.
  • Leave to cool on the tray for at least 20 minutes. Enjoy!
