Chocolate Honeycomb Cupcakes

Hey guys! A delicious recipe for you today which I created in collaboration with Croia Ireland for Valentines day. A rich chocolate chip cupcake, topped with a silky honey and vanilla buttercream and a homemade chocolate honeycomb bite using Sliabh Aughty Irish honey.

When making the Honeycomb just be VERY careful not to touch any of the hot sugar. It is super hot and can cause serious burns.

Chocolate Honeycomb Cupcakes

Prep time: 40 minutes 

Cook time: 20-22 minutes

Servings: 9

Ingredients

Cupcakes

  • 100g Self raising flour
  • 125g Caster sugar
  • 125g Unsalted Butter
  • 25g Cocoa powder
  • 65g Chocolate chips
  • 2 Eggs
  • 1 Teaspoon Vanilla Extract

Honeycomb Bites

  • 200g Caster sugar
  • 5 Tablespoons of (Sliabh Aughty Wildflower) Honey
  • 2 Teaspoons Bicarbonate of soda
  • 200g Milk chocolate

Buttercream

  • 150g Unsalted Butter
  • 300g Icing Sugar
  • 1 Teaspoon Vanilla Extract
  • 2 Tablespoons of (Sliabh Aughty Heather) Honey

Optional Decoration

  • Gold glitter
  • Sliabh Aughty Bee pollen 

Directions

Cupcakes

  1. Preheat your oven to 180C/160 C Fan. Line your cupcake tray with your preferred cupcake cases.
  2. In a mixing bowl, Cream butter and sugar together till pale and fluffy.
  3. Add in your Vanilla extract.
  4. Mix in eggs one at a time until combined.
  5. Sieve flour and cocoa into the mix and gently fold.
  6. Fold in chocolate chips.
  7. Spoon the cupcake mix into your cupcake cases evenly.
  8. Bake for 20-22 minutes or until a toothpick comes out clean.
  9. Leave to cool completely.

Honeycomb bites

  1. Line and grease your dish. I used a 9×9 square dish.
  2. Place sugar and honey in a deep pot.
  3. Keep on a medium heat till melted. Keep mixing.
  4. Cook until your sugar reaches a light golden amber colour.
  5. Carefully spoon in your bicarb. Mix through fast till just combine. (Be careful this will steam and bubble)
  6. Transfer to your baking dish straight away. Mind your fingers!!
  7. Leave to set at room temperature for about 30 minutes until cool and set.
  8. Once cooled, cut into chunks with a knife.
  9. Melt your chocolate.
  10. Dip your chunks of honeycomb into the chocolate halfway up and place on a tray lined with parchment paper.
  11. Set in the fridge for about 30 minutes till chocolate has set.

Buttercream

  1. Place soft butter into a mixing bowl. Using an electric hand whisk, whip up until very pale and fluffy. This will take about 5 minutes.
  2. Add icing sugar in 3 separate batches until incorporated well.
  3. Add in the Vanilla and Honey, whisk till silky smooth.
  4. Pipe onto your cupcakes then decorate with your Chocolate Honeycomb bites.
  5. ENJOY!!
