Chicken Caesar salad

Hi guys! A delicious easy classic recipe for you today! Something for this lovely warm summer. A classic Chicken Caesar salad done my way! Homemade dressing, crispy bacon and shaved parmesan is the way to my heart! Absolutely gorgeous salad with marinated chicken.

In this recipe I have said 2-4 chicken breasts. Depending on size or depending on how much chicken you want, you know the drill. You could use this recipe as a rough guide to make your caesar your way. The marinated chicken and the dressing are the main bits you can follow then use whatever you like! I haven’t included anchovies in this recipe as I know they are very hit and miss with people.

For my bacon, I made this super crispy in the air fryer because that’s how I like it. Play around and cook it how you like. You could even use bacon lardons or back bacon, all up to your preferences guys!

Chicken Caesar salad

Equipment

  • Frying pan
  • Chopping board
  • Food processor
  • Knife
  • Bowls
  • Baking tray

Ingredients

Croutons

  • 100 grams Bread I used stale sourdough
  • 1/2 tsp Oregano
  • 1/2 tsp Smoked paprika
  • 1/2 tsp Garlic granules
  • Salt & Pepper
  • Drizzle of olive oil

Chicken

  • Chicken breasts Use 2-4 depending on how much you want!
  • 1 tsp Oregano
  • 1 tsp Sage
  • 3 Cloves garlic
  • Juice and zest of half a lemon
  • Drizzle of olive oil
  • Salt & Pepper

Dressing

  • 2 Egg yolks
  • 1 Clove garlic
  • 1 tbsp Dijon mustard
  • 30 grams Grated Parmesan
  • 200 grams Olive oil
  • 50 grams Veg oil
  • 4 tbsp Lemon Juice
  • Salt & Pepper
  • Water A few tbsp to thin out of needed

Extras

  • 8 pieces Streaky bacon
  • Parmesan
  • Cos or baby gem lettuce Approx. 450g

Instructions

  • Add your chopped bread on to a baking tray. Drizzle with olive oil and cover in all your seasons. Bake at 160C until crisp and golden. Set-aside.
  • Add your chicken to a bowl with all its seasons. Mix and leave to marinate while you prep the rest of your ingredients.
  • In a food processor, add all of your dressing ingredients apart from your olive oil. Blitz till all smooth then in small batches add in your olive oil blitzing in between.
  • If your dressing becomes too thick you can add water tbsp at a time to your desired consistency. Set-aside
  • Cook your bacon till crispy. This can be done in the oven, frying pan or in an air fryer. I cooked mine in an air fryer.
  • Now lets cook your chicken, Cook chicken till golden on both sides and cooked through. Place onto a chopping board and slice into thin strips.
  • In a very large bowl, add your lettuce, some of your croutons, bacon, shaved parmesan and caesar dressing (Reserving the rest to garnish the top of each plate)
  • Split the salad into 4 dinner bowls then top with your chicken, bacon, croutons, shaved parmesan and extra dressing.
  • Enjoy guys!
