Carrot Cake

Hello guys! A classic cake recipe for you today, Carrot Cake. A classic carrot cake with a zesty kick! Two layers of spiced carrot sponge with crunchy walnuts layered with a smooth cream cheese icing.

This is just such a classic cake you cannot go wrong! I love adding orange for a zesty kick to the cake and to the silky cream cheese icing. Place around with adding different nuts like maybe a mix of walnuts and pecans, its up to you!

Carrot Cake

Equipment

  • 2 8 Inch round baking tins
  • Bowls
  • Hand whisk
  • Grater
  • Spatula
  • Palette knife
  • Weighing scales

Ingredients

Cake

  • 215 grams Vegetable/sunflower oil
  • 255 grams Light Brown Sugar
  • 300 grams Self raising flour
  • 1 tsp Bicarbonate of soda
  • ½ tsp Salt
  • 3 Eggs
  • 1 tsp Ground Cinnamon
  • 1 tsp Ground Ginger
  • 1 tsp Mixed spice
  • Zest Of an orange
  • 300 grams Grated carrots
  • 80 grams Chopped walnuts

Buttercream

  • 100 grams Unsalted butter
  • 100 grams Icing sugar
  • 200 grams Cream Cheese
  • ½ Zest Of an orange
  • Handful Walnuts for decorating

Instructions

  • Preheat your oven to 200/180C Fan. Grease and line your 2, 8 inch round tins.
  • In a mixing bowl, add in your eggs, oil, sugar, orange zest and mix.
  • Add in your grated carrots then mix until combined.
  • Mix in your sieved flour, salt and spices.
  • Fold through your chopped walnuts.
  • Divide the mix into your two cake tins and smooth down.
  • Bake for about 35 minutes or until a toothpick comes out clean and the cake springs bake when you gently press it.
  • Leave too cool in the tins for approximately 15 minutes then remove and cool on wire racks completely.

Cream cheese icing

  • In a mixing bowl, Cream butter until pale and fluffy using an electric whisk.
  • Whisk in the icing sugar and orange zest.
  • Whisk in the cream cheese until just smooth and combined.

Assembly

  • Place one of your cakes on your serving board. Spread over half of your icing.
  • Place your other layer of cake on top. Spread with the rest of your icing.
  • Finish with some walnuts and orange zest.
  • Slice up and Enjoy!!!
