Carrot Cake Cookies

- Baking paper
- Baking tray
- Bowls
- Electric whisk

Ingredients
Cookie
- 110 grams Salted Butter
- 100 grams Light Brown Sugar
- 60 grams Caster Sugar
- 1 Egg
- 225 grams Plain Flour
- 1/2 tsp Baking powder
- 1/4 tsp Bicarbonate of soda
- 1/4 tsp Cinnamon
- 1/4 tsp Ground Ginger
- 1/4 tsp Mixed spice
- 60 grams Grated carrots
- 50 grams Chopped Walnuts
Icing
- 100 grams Cream cheese
- 50 grams Salted butter
- 1/2 Zest Orange
- 50 grams Icing sugar
- 1/2 tsp Vanilla
Topping
- Sprinkle of cinnamon
- 4 tbsp Chopped Walnuts
Instructions
- Place your butter into a mixing bowl with both sugars. Mix until light and creamy.
- Add in your vanilla and egg then combine.
- Mix in your flour, bicarbonate of soda, baking powder, cinnamon, ginger and mixed spice until just combined.
- Grate your carrot and squeeze as much of the water out in a cloth as you can.
- Mix through your carrot and walnuts
- Split your mix into 8 cookie dough balls.
- Place in the freezer on a parchment tray for at least 1 hour.
- Preheat your oven to 200C/ 180C Fan 30 minutes before baking.
- Bake for 17-20 minutes.
- Leave to cool on the tray for at least 60 minutes until cool.
- For your icing, whip up your butter and icing sugar until soft and pale. Mix in your cream cheese, vanilla and orange zest until smooth.
- Pipe or spread your icing on the cookies then top with a sprinkle of cinnamon and walnuts. Enjoy!
