Hey guys! Hope you are all well! I have the most Delicious recipe for you all today, BBQ Chicken Quesadillas! A classic mexcian dish we all love! A golden toasted tortilla filled with delicious BBQ pulled chicken, melty cheese and veggies served with homemade salsa, homemade guacamole and sour cream!
I absolutely LOVE this recipe its probably my number one favourite dinner to make at home. It just tastes incredible and its packed with flavour. I have included a recipe for home made salsa and guacamole to serve your quesadillas with and it makes such a HUGE difference! Totally worth the effort I promise!I will upload separate reels on Instagram making these in the coming weeks also.

This recipe is super versatile! You can play around with different fillings and veggies if you wish. You can leave out certain ingredients if you don’t like them, you can use this recipe as a guideline then create so many flavour combinations! But I 100% think you should try make them the way I did too! They got devoured straight away in our house.

BBQ Chicken Quesadilla
Equipment
- Oven dish
- Frying pan
- Bowls
- Knife
- Spoons
- Chopping board
Ingredients
BBQ Chicken
- 3 Chicken breasts
- 2 tsp Smoked Paprika
- 1 tsp Garlic Dry or Fresh
- 1 tsp Ground corriander
- 1 tsp Ground Cumin
- Salt
- Cracked black pepper
- Chilli flakes To taste
- 1 Lime Zest & Juice
- 3-4 tbsp Water
- Worcestershire Sauce A few splashes
- 125 grams BBQ sauce
Guacamole
- 3 Avocados
- ½ Large Red onion
- 1 Lime Juiced
- 1 Medium tomato
- 15 grams Coriander
- Salt To taste
- Chilli To taste (Optional)
Salsa
- 5 Medium Tomatoes
- 1 Large Red onion
- 1 Lime Juiced
- 3 tbsp Olive oil
- Chilli To taste (Optional)
- 15 grams Coriander
- Salt
- Cracked black pepper
Additions
- 4 Tortilla wraps
- Grated cheese
- Sour cream To serve
- Red onion
- Sweetcorn
- Lime wedges
Instructions
BBQ Chicken
- Preheat your oven to 200C/ 180C Fan.
- Place your chicken into an oven safe dish. Place all your ingredients on top of your chicken except for the BBQ sauce.
- Cover your dish and cook for 25-30 minutes until cooked through.
- Leave to cool for about 10 minutes then using two forks, pull the chicken apart.
- Mix in your BBQ sauce. Set aside.
Guacamole
- Remove the skin and stone from your avocados and place in a bowl.
- Smash the avocados then add in your lime juice and mix through.
- Dice your onion very small then add to your bowl.
- Chop your coriander then add to your bowl.
- Remove the insides of your tomato by quartering it then slicing the centre out. Dice your tomato the same size as your onion.
- Season your guacamole with salt and chilli then cover and place in the fridge till serving.
Salsa
- Remove the insides of your tomato by quartering it then slicing the centre out. Dice your tomato very small then add it to a clean bowl.
- Dice your onion the same size as your tomato then add it to your bowl.
- Chop your coriander then add it to your bowl.
- Add in your lime juice and olive oil then season with salt, pepper and chilli to taste. Cover and set aside till serving.
Quesadilla cooking
- Line up 4 tortilla wraps on your counter, on one side/half of each wrap, divide the BBQ chicken between the wraps.
- On top of your chicken you can add any other filling you like, I added red onion and sweetcorn.
- On top of this you add your grated cheddar, use how much you like!
- Fold the empty side of the wrap on top of the filling side so you are left with a semi circle.
- Place a pan on a medium heat.
- Fry your filled tortilla on each side till nice and golden and your filling is all melty and warm. Repeat with your other wraps. If you want to keep all your quesadillas warm just place them in the oven a very low setting after frying.
- Cut each wrap into 3 when cooked and serve with your sour cream, guacamole, salsa and lime wedges.
- Enjoy!!
Notes
- Best eaten straight away.
- Fillings can be substituted for anything you like.
- Salsa and guacamole sides are completely optional.
- Chicken can be substituted for other meats but they will not have to be cooked the way the chicken was.
- This recipe can be halved or doubled ect.
- Guacamole and salsa will last 3+ days in the fridge covered.
