Apple Crumble Loaf Cake

Hello guys! A delicious cake recipe for you today! Apple Crumble Loaf Cake, A lightly spiced sponge layered with chunks of sweet apple then topped with a butter crumble and drizzled in a vanilla icing. Absolutely delicious and warming!

These loaf cakes are such a beautiful and easy bake that is a perfect celebration bake or if you’re just looking for a treat. Slices up into portions straight away and looks incredible. I used cooking apples in this recipe as I love the texture once baked but you can definitely use your normal eating apple like a Granny Smith.

I used a 2 pound loaf tin to make this recipe but it will work in any size tin, Just keep an eye on it in the oven to see centre rise and a toothpick that comes out clean! Feel free to even make this recipe into cupcakes and bake them for approximately 18 minutes or until a toothpick comes out clean.

Equipment

Ingredients

Cake

  • 175 grams Unsalted butter
  • 175 grams Self raising flour
  • 175 grams Light Brown Sugar
  • 3 Eggs
  • 1 tsp Vanilla
  • 1/2 tsp Cinnamon

Apples

  • 150 grams Bramley Cooking apples
  • 1/4 tsp Cinnamon
  • 30 grams Light Brown Sugar

Crumble

  • 60 grams Plain flour
  • 75 grams Cold Salted butter
  • 25 grams Oats
  • 65 grams Light Brown Sugar
  • 1/4 tsp Cinnamon

Icing

  • 80 grams Icing sugar
  • 20 grams Water
  • 1/2 tsp Vanilla

Instructions

  • Preheat your oven to 180C/160 C Fan. Grease your loaf tin and line with parchment.

Crumble Mix

  • In a small bowl add in all your ingredients except your butter and give it a mix. Next, add in your butter chopped up then rub the butter into the dry ingredients until your get a nice crumble consistency. Set aside in the fridge until needed.

Apples

  • Peel and dice your apples into small chunks. Add into a bowl with your sugar and cinnamon. Give them a mix then set aside.

Cake

  • In a mixing bowl, Cream butter and sugar together till pale and fluffy.
  • Mix in the eggs and vanilla until combined.
  • Sieve in your flour and cinnamon then mix till combined.
  • Add a layer of your cake batter to cover the base of your loaf tin. Sprinkle over 1/3 of your apples. Repeat two more times using up all your apples and cake batter.
  • Sprinkle all your crumble mix on top.
  • Bake for 45-55 minutes until a toothpick comes out clean.
  • Leave to cool completely.

Icing

  • Mix your icing sugar, vanilla and water in a small bowl. Add more or less water depending on the consistency you like.
  • Drizzle over your cooled apple crumble cake. Enjoy!!!
