Hey everyone! Another delicious brownie recipe for you today. I love a chocolate/mint combo. These are a gooey and crispy brownie with little pockets of minty goodness.

I didn’t add any extra mint extract as I thought the minty flavour was just right, nice and subtle. Feel free to add some mint extract if you want an extra punch. A mint aero bar could also be used in this recipe if you can’t get a hold on the bubbles.
This is a super simple recipe to follow. I LOVE a fudgy brownie but if this isn’t your cup of tea and you prefer a cakey brownie, just add on another 5-10 minutes to the cooking time. Or until a toothpick comes out clean.

Mint Aero Bubble Brownies
Prep time: 15 minutes
Cook time: 30-35 minutes

Ingredients
- 145g Butter
- 300g Caster Sugar
- 75g Cocoa
- Pinch of salt
- 2 Eggs
- 65g Plain flour
- 150g Aero bubbles
- Teaspoon vanilla
- Decoration (Optional)
- 150g Aero bubbles
- 50g Dark chocolate
- 50g White chocolate with a drop of green food gel
Directions
- Preheat oven to 200C/ 180C (Fan) and line 8×8 square tray.
- Melt butter in microwave.
- In a mixing bowl add sugar,salt and cocoa powder.
- Add butter into mixing bowl and mix in.
- Next, add one egg at a time into mixture and fold until incorporated.
- Add sieved flour and vanilla into mix and fold everything together just until it’s combined.
- Place half of the mix into your lined dish. Place your Aero bubbles on top then cover them with the other half of your mix.
- Bake for 30 -35 minutes.
- Remove brownies from the oven and put on a cooling rack.
- Once fully cooled, melt your topping chocolate separately. Drizzle over your brownies.
- Decorate with Aero bubbles. I left some whole and crushed some too.
- Leave to set in the fridge until chocolate firms up.
- Cut into portions.
- Enjoy!
