Chocolate Chip Cookies

Hey everyone!

Back again with a simple bake, my chocolate chip cookies! A quick and easy recipe that is so delicious.

I used dark chocolate and white chocolate chips in mine but you can play around with what you prefer. Prep time is very short with these cookies but you have to make the dough a few hours in advance. This is to improve flavour and shape of your cookies.

I took an optional step by chilling my dough rolled into a log with cling film. After my dough was chilling for 3 hours I could slice up my log and bake my slices. A good thing about doing this is that you can cut off how many cookies you want and keep your cookie log in your fridge or freezer till you want to bake some more. This method gave me super round and even cookies.

If you don’t want to do this you can just chill the dough then shape right before cooking with an ice cream scoop or your hands.


Chocolate chip cookies

Prep time: 10 minutes + 3 Hour chill time

Cook time: 8-10 minutes

Ingredients

Directions

  1. In a large mixing bowl, cream butter and sugars until light and fluffy.
  2. Add in vanilla and egg and combine.
  3. Sieve in flour, baking powder and salt.
  4. Fold in dry ingredients and chocolate very lightly.
  5. Chill dough for at least 3 hours until firm.
  6. Preheat oven to 185C Fan/200C 15 minutes before baking your cookies. Line baking sheet with parchment.
  7. Slice into cookies or scoop onto baking tray into 12 portions.
  8. Bake for 8-10 minutes until edges of cookies just start to brown. You might think they are underbaked but trust me take them out, they will continue cooking. This will give you a softer chewier cookie.
  9. Remove from the oven and let rest for 5 minutes on baking tray before placing on cooling rack.
  10. Enjoy!
